It’s probably no surprise that I like typical “man food.” BBQ, steaks on the grill, sandwiches and appetizers are my favorites. And while this pulled pork baked potato isn’t made with true BBQ that’s been smoked for several hours, they are pretty tasty for a meal or side and satisfies that craving for meat and barbecue. You can make this BBQ pulled pork in the slow cooker or in the Instant Pot, whichever you prefer. We’ll include directions for both below.
If you want to take the easy way out, you can also grab some pulled pork from your favorite BBQ joint to bring home and add to potatoes or nachos. I’ve done that plenty of times from our favorite local joint, A Taste of Memphis. Just microwave your potato, top with heated BBQ, cheese and green onions, and you’re all set for a hearty meal.
Directions for the Pulled Pork Baked Potato
Okay, so I probably didn’t need to include the instructions for microwaving potatoes below, but they are included just in case. Here’s a tip for tender baked potatoes in the microwave (instead of hard, dried potatoes): poke the potatoes with a fork first, and then wrap them in wet paper towels before microwaving. It helps keep the moisture in while they cook.
Keep in mind that the instructions are for medium-sized russet potatoes.
If you’re using large baking potatoes, I recommend rubbing them in oil, wrapping them in aluminum foil and baking at 350 degrees for about an hour or so.
Pulled Pork Baked Potatoes
These pulled pork baked potatoes are a delicious side dish for your summer BBQ, or you can eat them as your main course if using large baking potatoes.
Ingredients
- 2 lb pork butt
- 2 cups BBQ sauce any brand divided
- 1/2 cup water
- salt and pepper to taste
- russet potatoes scrubbed
- shredded cheese
- sour cream
- butter
- green onions
Instructions
Slow Cooker Pulled Pork Instructions

Place the 2 lb pork butt in the bottom of the slow cooker. Season with salt & pepper.

Whisk together the 1/2 cup of water and 1 cup of BBQ sauce and pour over the pork butt.

Cover and cook on high 7-8 hours.

Once it has cooked through, remove from the liquid and shred. Add in more BBQ sauce, to taste.
Instant Pot Pulled Pork Instructions

Cut the pork into 2 pieces and place in the bottom of the instant pot. Season with salt & pepper.

Whisk together the 1/2 cup of water and 1 cup of BBQ sauce and pour over the pork butt.

Press manual and set the timer to 90 minutes making sure the release valve is closed

Once the timer has finished allow the pressure to come down on it's own.

Once it has cooked through, remove from the liquid and shred. Add in more BBQ sauce to taste.
Baked Potato Instructions (Microwave)

Poke multiple holes in the potatoes with a fork.

Place the scrubbed potatoes on a microwave safe plate.

Heat on high for 5-6 minutes.

Flip and heat and heat another 5-6 minutes.
